When I made the decision to eliminate dairy and soy from my diet, there were a few things I started missing right away, and hot cocoa was one of them. We had some instant packets in our cabinet that I read hopefully, but of course they contained dairy. I started searching the internet for non-dairy recipes and found one that tasted good, but was much more complicated than pouring a packet into a mug and adding hot water. I’m not sure why, but there are mixed feelings about boiling almond milk. Some people say you shouldn’t boil it, but others say they do and it’s not a problem. To be safe, I tried to find a simple way to make a single serving of hot cocoa without boiling the almond milk (or having to stand over a pot to warm it and make sure it doesn’t boil). I find this method to be both easy and delicious and hope you do, too.

Dairy Free Hot Cocoa

2 Tbsp Unsweetened Cocoa Powder
2 Tbsp Granulated Sugar
¾ cup Boiling Water
½ cup Almond Milk
½ tsp Vanilla Extract

1. Put cocoa powder and sugar in a mug and stir together.
2. Add boiling water and stir until cocoa powder and sugar are completely dissolved.
3. Add cold almond milk and stir. Add vanilla and stir.

This makes a very rich hot cocoa. If you prefer a less chocolaty flavor, add more almond milk to taste.
