These roasted potatoes have been a favorite in our family for years. They are so simple, and make a great side dish to almost any meal. They go well with chicken dishes, beef and pork roasts, steaks, or as a healthier alternative to fries with a burger. We usually use Italian seasoning to flavor the potatoes, but you could easily change up the flavor by using herbs of your choice. Sometimes, we leave them “plain” with salt and pepper only, and other times we pick one herb, like rosemary, instead of a blend. By varying the herbs, you can make these complement just about any entrée.


Roasted Potatoes


2 lb red potatoes (or other roasting variety)

2 Tbsp olive oil

½ tsp salt

½ tsp Italian seasoning

¼ tsp pepper


  1. Preheat oven to 400º. Place empty baking pan in oven while it is preheating.
  2. Wash potatoes and cut into 1 inch pieces. Do not peel them, other than to remove any bad spots.
  3. Put chopped potatoes into a medium bowl and toss in olive oil. Sprinkle with all herbs and spices and toss well to coat evenly.
  4. Spread potatoes in an even layer on the warm baking sheet. Bake for 40 minutes, turning potatoes once (best to use a hard spatula to scrape them off of the pan completely). They will be golden brown and tender when done.
